PACIFIC OYSTERS
Pacific Oysters are primarily grown in Tasmania and South Australia, but also in more recent times in NSW. They are characterised by a fresh, clean and salty flavour.
SIZE
Our grade size for extra large Pacifics is 110 mm top lid length - this measured from the hinge to where the lid meets the start of the new growth frill. Our grading machine has a variance of up to 10 mm for these biguns so please do expect both smaller and larger sizes – although we do try to get a consistent size sometimes smaller and bigger ones slip through!
All Signature Oysters are delivered live (unopened / unshucked).
