SIGNATURE SELECTION
The cream of the crop as selected by passionate farmers in accordance to Royal Agricultural Show standards. The perfect size oyster, no too big, not too small, suited to chefs at top tier restaurants where provenance is of utmost importance.
PACIFIC OYSTERS
Pacific Oysters are primarily grown in Tasmania and South Australia, but also in more recent times in NSW. They are characterised by a fresh, clean and salty flavour.
SIZE
Our grade size for large Pacifics is 60-70 mm top lid length - this measured from the hinge to where the lid meets the start of the new growth frill. Our grading machine has a variance of up to 5 mm so please do expect both smaller and larger sizes – although we do try to get a consistent size sometimes smaller and bigger ones slip through!
