Highlighting the emphasis we have on Provenance at Signature Oysters, we jumped at the chance to send chef Geoffrey Lemaitre to meet with our oyster farmer Nathanael Dodt from Blue Moon Oysters in Bruny Island, Tasmania and spend a day on the farm. Geoffrey and his partner had a terrific time on the farm learning where our oysters are sourced.
Geoffrey Lemaitre is the head chef of Trattoria Emilia – formally known as Gill’s Diner. Trattoria Emilia has recently reopened with minor cosmetic changes to enhance customer experience as well as a new menu, heavily weighted with cuisine from Italy’s Emilia-Romagna region. Joining forces with the previous Gill’s Diner team we extend our warmest welcome to chefs Luca Flammia and Francesco Rota and front of the house Matteo Neviana.
When restaurants we love want the opportunity to visit one of our numerous oyster farms from across Australia, we can’t say no to this amazing farm to table experience.
