As kids, a lot of us would have said, “I want to be a policeman/ teacher/ doctor/ astronaut or anything else that seemed cool when we were kids”, and change our minds the week after. For Anthony, his path was clear right from the start.
Anthony’s sister married a farmer when he was young, so he spent school holidays helping on the farm. Having grown up with farm work, Anthony was naturally drawn towards the oysters, simply because it’s farming – and it’s farming in a beautiful environment. Oyster farming is no easy job; so not only does Anthony love the water, but he also loves the challenge of growing a product in an ever-changing environment. We all know it: the greater the challenge, the greater the satisfaction.
Anthony is keen on working on his oysters; he handles his oysters every 5-6 weeks to grade them and put them in an area that will maximise their growth, and his effort results in a great product. He likes to grow a fairly round oyster that they call Piccolo oysters – their shape makes them stand out from the rest in the market.
For Anthony, 15 years of oyster farming has only developed his passion for oysters further, and nothing less.
