Craig has tried other paths besides oyster farming, but like many of our farmers he discovered the office was not for him and he loved being outdoors. He calls himself “fanatical” about oyster farming and says that he is forever in pursuit of the perfect oyster.
He aims for his oysters to be beautifully consistent in size, shape, and flavour. He has even gained the respect of some Japanese chefs who insist his oysters must be consumed exactly 5 days after harvest.
Craig farms near St Helens in Tasmania and ensures that his oysters are hand graded, carefully packed, and delivered to the customer; he says they are the best of the best and packaged to ensure the integrity of flavour and freshness.
Oyster farming is Craig’s passion and this can definitely be seen through the high quality and exceptional taste of his oysters!
