Ewan’s farm is located on the Clyde River in the heart of New South Wales’ south coast, with beautiful scenery that many can only dream of working in. As a marine scientist, farmer and director of Signature Oysters, Ewan has really combined his passion for both science and seafood, to not only grow great oysters, but also deliver them as a product that others can rave about. He is passionate about using modern technology and innovation to balance sustainability and supply. To Ewan, the method of growing oysters is just as crucial as the experience his products deliver to the end users. Most important of all – he enjoys the whole process right from the beginning till the end.
For many, oysters and a glass of wine may be an occasional delicacy to reward themselves with; for Ewan, oysters bring family and friends together, and are what they get all excited about. A few drinks, some good food, and most important of all – his very own oysters, is what he would call a great night. Oysters may just be shellfish to some, but to Ewan – and many other oyster farmers alike – they are a lifestyle.
