As a commercial fisherman and oyster farmer from Whales, Mike Jay knows the marine environment very well.
After self-funding his retirement, Mike moved to Australia and with nothing to do, followed his nose back into oyster farming.
Mike’s farm is located in Wapengo Lake, NSW. Mumbulla Mountain forms the catchment for the pristine waters that feed the lake.
“It’s about being in tune with how oysters respond to their environment.” With a single creek feeding the Wapengo Lake, the community make sure to keep to the waterway as clean and pristine as possible.
“Australian oysters are a food for the people, and I want to make sure they have the best experience possible.”
