Dealing with the harsh environment and ever changing conditions of the South Australian coast, our SA farmers are a resilient bunch who enjoy a challenge.
It’s his love for nature and water that drove Anthony Peters to a career in oyster farming. He grew up helping on farms, and was driven by the challenge of growing in a changing environment. His farm, Swift Water Oysters, produces Piccolo oysters that have a uniquely round shape, which makes them stand out in the market.
Dallas Power has been an oyster farmer for 10 years. Before that he worked as a commercial fisherman in Port Lincoln. Part of his farm, Power Aquaculture, is located on a small island called St Peters, an area known for consistently clean oysters with hard shells. Dallas can’t get away from the sea – even when he has time off work, he will be spending his time fishing with family and friends.
Located in the stunning Coffin Bay, Gary Hetzel’s farm grows and nurtures oysters all year round. Because Gary doesn’t have a huge farming area, he is able to closely monitor his oysters to make sure they are consistently getting the right nutrients. The result is oysters that are enjoyed all over the world.
Signature Oysters is proud to be supporting and working with these local farmers from South Australia to deliver the highest quality oysters to restaurants around Australia.
