For our farmers in Tasmania, oyster farming isn’t just a job – it’s a lifestyle. We are constantly amazed by their dedication to the constant improvement of their methods and products.
Ben Cameron starts his days visiting the hatchery with his uncle. He is proud that Cameron of Tasmania, located in Eaglehawk Nest, is entirely a family run business. Together they work hard, selectively breeding and hand rearing, to consistently produce high quality oysters. Their hard work pays off and they enjoy the benefits of word of mouth to spread the message about their fantastic oysters.
For Craig Lockwood, growing oysters and his love for seafood go hand in hand. He believes that oyster farming is a fine art, and combines years of experience with modern technologies to produce beautiful and consistent oysters. Lease 65’s products are the result of Craig’s lifelong pursuit of the perfect oyster.
Nathanael Dodt applies his knowledge gained studying marine biology to his oyster farming. His oysters are thus a result of years of experience, professional knowledge and a love for aquaculture. Nathanael’s farm, Blue Moon Oysters, is located near Bruny Island, Australia’s most southerly oyster farming region. The area enjoys nutrient rich currents and cold Antarctic winds.
Our farmers down in Tassie are dedicated to consistently producing the highest quality oysers. Signature Oysters loves working with them to provide the freshest produce to restaurants around Australia.
