Last week, Ben, Ellen and Tim Cameron – some of our Tasmanian farmers – came to Melbourne to visit some of the restaurants we love here at Signature Oysters. We managed to visit three restaurants in the one night, which included Dutchess, Cumulus Inc, and Pei Modern.
The farmers taught the chefs quite a bit about the process of breeding juvenile oysters and how different growing techniques influence the flavour and texture of the oyster. It was quite a learning experience for me as well!
We have been invited back by all three chefs to educate their front of house staff about oysters. Needless to say we had a great night!
Overall the event was a really worthwhile exercise and great fun for everyone involved!
