Signature Oysters prides itself on being Australia's leading hub of premium oysters since 2014.
Signature Oysters started as a small, family-run farm on the magnificent Clyde River, South Coast NSW. Since then, our operation has expanded to include a curated selection of premium oysters, hand reared and selected by producers from all over the Shoalhaven, Eurobodalla and South Coast regions.
Each year more than 400,000 oysters are grown, harvested and graded to our Signature standard, and packed for delivery to thousands of online customers and 30+ restaurants in Australia.
Located at Bateman’s Bay, 4 hours south of Sydney, we work together with the environment, the seasons and the local community. Our region is home to a diverse range of plant and marine lifeand holds a reputation for its pristine water quality and estuary health. The Clyde River flows over 100 kilometres, through 3 national parks and 10 state forests and is a highly valued asset tothe local community, businesses and Yuin First Nations culture. Oyster farms improve waterway health by creating habitat for a variety of marine species. Oysters are bivalves - filter feeders that purify the river water by extracting excess nutrients, and creating ocean walls to protect more vulnerable marine and river structures. As oyster farmers, we create an economic incentive to protect our natural environment, with the least amount of ecological impact possible.
My life as a modern oyster farmer is not just about growing great oysters; it’s also about delivering a product you can rave about.
As a marine scientist, farmer and director of Signature Oysters, my passion is using modern technology and innovation to balance sustainability and supply while providing an unforgettable experience.
