    Shell appearance: A prominent undulating frill that imparts texture. A steely basalt colour to the shell.

    Flesh appearance: The dark rim on the inside of the shell starkly contrasts the milky white flesh. Beautiful pale blue-green gills.

    Aroma: Ripe melon or banana

    Taste: Baked cream characteristic. It lingers on the back palate with a nice sweetness like young gingery spice. Both juicy and meaty.


    These rare oysters occur naturally from the algae that the oyster eats. The result is a lovely blue-green gill colour that is truly something special to see.
    The cream of the crop as selected by passionate farmers in accordance to Royal Agricultural Show standards. The perfect size oyster, not too big, not too small, suited to chefs at top-tier restaurants where provenance is of utmost importance.



    Sydney Rock Oysters grow naturally from SE Qld to the VIC/NSW border. They are characterised by a deep, rich and sweet flavour that is truly unique.


    Our grade size for the Emerald large rocks is 50-65 mm top lid length - this is measured from the hinge to where the lid meets the start of the new growth frill. Our grading machine has a variance of up to 10 mm so please do expect both smaller and larger sizes – although we do try to get a consistent size, sometimes smaller and bigger ones slip through!

     All Signature Oysters are delivered live (unopened / unshucked).
